Here's a really great recipe for Gazpacho that I just tried out. It's from the cookbook "Sunfood Cuisine". It's great for a hot day and it's a totally raw dish, which means it's good for you too. Enjoy!
Ultimate Gazpacho
2 cups tomato
1 cup cucumber
1/4 cup olive oil
1/3 cup lemon juice
1/2 tsp. sea salt
1/2 to 1 tsp. jalapeƱo pepper, minced
1 garlic clove
Blend. Place in a bowl.
Add:
2 cups tomatoes, chopped
2/3 cup cucumber, chopped
1/2 cup red bell pepper
1/4 cup onion, chopped
1/2 cup of cilantro or parsley, chopped
And that should do it. Enjoy!
